Healthy Christmas Lasagna Recipe

I usually serve Italian food when David’s parents are visiting for Christmas, and I’ve made this so many times it’s becoming our tradition. I usually whip up some of these quick stuffed mushrooms to snack on while the lasagna is cooking, too. If you’re planning a dinner party, make a slow-simmered wine ragu to make for an extra special meal.

Sometimes when I have this on our menu during a busy week I make the meat sauce and cheese filling the weekend before, although it honestly doesn’t take too much time at all to prepare all at once.

Our Family's Christmas Lasagna
1 lb. ground turkey breast
4 cloves garlic, minced or crushed
1 onion, chopped
1 1/2 c. water
26 oz. jar of of your favorite pasta sauce - or homemade!
3 c. shredded mozzarella, divided
2 c. 1% fat cottage cheese
1/2 c. shredded Pamesan
1/2 c. egg whites (depends on the size of your eggs, I usually use 4-6)
1/4 c. chopped fresh basil and/or parsley - whatever you have on hand
1/4 tsp. pepper (I used freshly ground)
9-10 uncooked lasagna noodles

Preheat oven to 350. Brown turkey with the garlic and onion. Drain if needed, then add water and pasta sauce. Bring to a boil, cover, reduce heat and simmer for 10 minutes.

Mix 2 cups mozzarella with the cottage cheese, parmesan, egg whites, herbs and pepper.

Spread 1 cup turkey mixture on bottom of a glass casserole dish.

Top with three noodles, another 1 1/2 cup turkey and half the cheese mixture. Repeat layers, ending with the turkey mixture.

Cover and bake 1 hour at 350. Top with remaining cup of mozzarella and bake uncovered for 10 minutes. Let stand 10 minutes before serving.
