What We're Eating This Week

For those of you who were worried about my all-fruit and salad dinners on Instagram, I seem to be over my meat aversion, but not all the way. Shrimp, fish and roasted chicken are about all I can stomach.

I still cook regular meals for David and Georgia when I'm not eating meat.

  • Blackened Tilapia with Salsa Verde topping; homemade guacamole served on salad with chips
  • Pesto Roasted Chicken; roasted potatoes; steamed cauliflower & broccoli
  • Salad with Strawberries, Apples & Homemade Croutons; Parmesan Cous Cous
  • Chicken with Mushroom Cream Sauce; Sauteed Spinach with Onions & Garlic; toasted baguette
  • Deep Dish Quiche with Spinach, Tomatoes & Pesto; Potato & Sausage Hash
