Birmingham Baby Shower Food!

I feel horrible that I'm only now posting about the fabulous food we had at the Birmingham Couples Cocktail Shower. I knew I needed to do it and just kept getting overwhelmed because I thought it would take a lot of time to upload all the photos. And I'm just naturally pretty lazy! I'm enjoying my last two months of being lazy, though!

Here is the awesome dessert table. We had two of my favorite candies (M&Ms and Nerds) as well as pink chocolate lollipops, cupcakes and Julie's famous fondue with strawberries, pretzels, Rice Krispy Treats, marshmallows and more for dipping.  Molly also made some adorable mints that looked like miniature pacifiers using white Life Savers and Jelly Bellys. Genius!

The girls made these lollipops using a candy mold. They were planted in cups of Nerds.

Low-carb pizza bites (recipe below) went over so well that another couple of batches had to be made during the party! Another thing I absolutely loved about this shower is that they served my favorite food. There are only two restaurants I request to visit every time I'm in Birmingham. O'Carr's for their famous chicken salad (no place else does it like the South!) and Jackson's for their pimento cheese. The girls served both!!

There were also several other food options, such as turkey and sun-dried tomato wraps, ham and chive cream cheese wraps, mini ham sandwiches (the girls baked the ham themselves!), spinach dip and buffalo chicken dip.

The beverage table. Sadly, I only got to sample the lonely bottle of sparkling grape juice. I heard the vodka champagne punch was heavenly, though!

Low Carb Pizza Bites
8 oz. cream cheese
2 eggs
1 tbsp. garlic powder
1 tsp. oregano
1/4 cup sugar free pizza sauce
1/2 cup shredded cheese
24 slices thin-sliced pepperoni

Preheat oven to 350.
Place one slice of pepperoni into the bottom of each cup of a mini muffin tin.

Cream the cream cheese with a mixer until fluffy. Add eggs and seasoning and beat until smooth. Mix in remaining ingredients by hand. Spoon into muffin tin over pepperoni.

Bake for 15-20 minutes until top begins to brown and set. Cool 5-10 minutes before removing from pan.

Each bite has 67 calories, 1 g carb, 1 g protein.
