Creamy Lime Guacamole

The photos of this turned out horribly. Think green, creamy...yuck! Anyway, it looks fantastic in person and it's a cinch to make. It's a brighter color than traditional guacamole, and it's easy to dress up with festive serving dishes or crudites. It's creamy like most sour cream based dips, and the lime gives it an unexpected tang. It is also fantastically healthy, so you could stick to your 2009 resolutions by having it, rather than hummus, with veggies or pita chips.

4 avocados (minus the peels and pits)
1/2 cup sour cream
1/4 cup lime juice
1 cup fresh cilantro
1 jalapeno, seeded and cut into chunks (I leave a few seeds, but this is personal taste)
a sprinkle of freshly ground pepper and sea salt


Throw everything into a food processor and process until smooth!

This is fantastic and healthy served with crudites such as celery, broccoli and red pepper strips. It's equally tasty, although not as healthy, served with tortilla chips or toasted pita bread.
